Ingredients
✅4 Wei-Chuan Steamed Buns (filling of choice)
✅2 TB Neutral Oil, for searing buns
✅Fried garlic chips, garnish.
✅Togarashi, garnish.
Slaw
✅1 Seedless Cucumber, shredded without seeds
✅3 large Tri-Color Carrots (1 of each color), shredded
✅1 Green Onion, sliced thinly
✅3 Sprigs of Cilantro, roughly torn.
Slaw Dressing
✅1 TB Soy Sauce
✅2 cloves of garlic, crushed
✅2 TB Sriracha (Shark Brand)
✅1 TB Lao Gan Ma Chili Crisp
✅3 TB Rice Vinegar
✅2 TB Honey
✅2 TB Wei Chuan Chili Sesame Oil
✅Salt & MSG, to taste
Method
1. Shred cucumber and carrots using a serrated peeler to make thin strips about 2-3” long. Combine in a bowl with sliced green onion and torn cilantro.
2. In a mixing bowl combine all dressing ingredients except for the Wei Chuan Chili Sesame Oil. Once all combined, gently stream the Chili Sesame Oil while whisking vigorously to emulsify.
3. Add dressing to slaw according to how dressed you like it.
4. Place frozen buns on a microwave safe plate and cover with a damp paper towel. Microwave for about 1min until soft and pliable.
5. Heat a non-stick skillet over medium heat and add oil. Once heated, sear bun pleated side down and remove paper from bun.
6. Gently press down the bun with a wide spatula to flatten bun, but do not press so hard that it tears to avoid oil splatter.
7. Sear bun until golden brown and flip, repeating until both sides are browned.
8. Place buns on a serving plate and garnish with slaw, fried garlic, and togarashi.
