Easy Green Chili Sauce and Paste Recipe | Green Ajika

Learn how to make a delicious, easy salsa-style spicy chili sauce from the country of Georgia. Green ajika—which is made with green chili peppers, garlic, fresh herbs, and spices—looks like Italian pesto. It is typically used with as a condiment for vegetable dishes and bean dishes or stirred into soups and stews. This moderately hot ajika has a deep green color, and the fresh herbs add to its texture. Double the amount of green bell pepper if you want milder version. It can be kept refrigerated for a month or longer.

Ingredients for Green Ajika
Makes 2 cups

½ pound/226g fresh green chile peppers, preferably serranos
1-2 mild Anaheim, Cubanelle or large green bell peppers (about 8 ounces/226g), peeled, seeded and coarsely chopped
8-9 large garlic cloves, peeled
1.4 ounces/40g celery ribs with leaves (about ~1 cup), coarsely chopped
1 bunch of cilantro (about 1.4 ounces/40g ~1 cup)
Half a large bunch of flat-leaf parsley (about 0.7 oz/20g ~ ½ cup)
A small bunch of fresh dill (1/3 cup/15g)
1 tablespoon ground coriander seed
1 tablespoon ground blue fenugreek
1 tablespoon salt
