INGREDIENTS:
For chilli paste:
– 1 onion (medium)
– 4 garlic cloves
– 8 dried red chillies
– 2 pcs roasted coconut
– 1/4 cup curry leaves (handful)
– 1 1/2 tbsp chilli powder (lonumirus havaadhu)
– 1/4 tsp cumin powder
– 1/2 tsp pepper powder
– 1 1/2 tsp salt
– 1/4 tsp tumeric powder
– 1 tbsp cooking oil
– 1/2 tbsp oyster sauce
– 1/3 of a scotch bonnet chilli (according to your spice preference)
– 1 ginger slice
– 3-4 nos. bilimbi

– In a blender add all the ingredients listed above and grind it to a smooth paste.

INGREDIENTS:
For Chicken marination and frying:
– 750g chicken (with bones)
-1/4 tsp salt
– 3 tsp grinded chilli paste, from earlier.

– Oil for frying

– To chicken pieces, add salt, and grinded chilli paste mixture. mix everything well and set it aside for 15-20 mins / or until you are done prepping for the recipe, such as cutting onion and garlic.

– To a pot, add cooking oil for frying. once oil is hot, add chicken pieces one by one. Fry it in batches, in or to avoid overcrowding the pot.

– Fry it 3-5 mins on each side. once done, flip it and keep it for around the same amount of time. Once done, remove to a plate.

INGREDIENTS
For gravy:
– 2-3 tbsp cooking oil
– 1 onion
– 2 garlic cloves
– 15 nos. curry leaves
– 1 ginger slice
– 1/3 of scotch bonnet chilli/fresh chilli of your choice
– 1/4 tsp cumin powder
– 1/2 tsp chilli powder
– 1/4 tsp black pepper powder
– 2 tbsp tomato paste
– 1 1/2 tbsp grinded chilli paste from earlier
– Salt to taste (1/2 tsp)
– 1/3 cup hot water (150ml)
– 1 tbsp soy sauce
– 1 tbsp oyster sauce
– 1 tsp chilli sauce

– To a pot, add cooking oil, sliced onion, roughly chopped garlic, curry leaves, ginger slice and fresh chilli. Saute till lightly golden browned. On high heat for few mins and then on low heat.

– On low heat, add spices; cumin powder, chilli powder, and black pepper powder. mix for few seconds.

– Add tomato paste and grinded chilli paste from earlier. mix 2-3 mins on low to medium heat.

– Add salt to taste and hot water. mix well.

– Add soy sauce, oyster sauce and chilli sauce. Cook 2-3 mins on medium heat.

– Add fried chicken pieces and mix for 1-2 mins and then turn off the heat.

– Enjoy with any kind of rice or roti dishes. Go well with plain rice, fried rices, parata, naan, Maldivian flat bread / roshi, bread, etc.
