Ingredients Required:
Jackfruit seeds -50 nos.
All-purpose flour /maida – 6 tablespoons
Cornflour – 6 tablespoons
Salt – ½ tsp
Black pepper powder – ¾ tsp + for sauce
Water – 1 cup
Oil – for deep frying
For sauce:
Oil – 2 tablespoons
Finely chopped garlic – 1 tablespoon
Finely chopped onions – 2 medium sized
Roughly sliced capsicum – 1 number
Red chilli paste – 2 tablespoons
Tomato ketchup – 2 tsp
Sugar – 1 tsp
Salt – ½ tsp
Water – ¾ cup
Cornflour – 2 tsp
Procedure:
• Separate the seeds from the jackfruit pods. Wash the seeds and pressure cook them with 3.5 cups of water for 2-3 whistles or till semi soft. Do not over cook them else they turn mushy and you won’t be able to get the pieces out of it. Once cooked drain the seeds from its stock.
• Cut each of the jackfruit seeds into 3 pieces. If the seeds are small then cut them into halves.
• Next step is to prepare a batter for deep frying the jackfruit seeds. For this let’s take maida / all-purpose flour and cornflour in a mixing bowl. It’s necessary to take the maida and cornflour in equal proportions so that the jackfruit seeds remain crispy after frying else there are chances of them turning soggy. Next add salt and black pepper powder. Add in a cup of water to make a thin batter. If you find your batter to be thick add in additional water to adjust the consistency.
• Dip in the jackfruit seed pieces into this batter and coat them nicely. Meanwhile heat oil in a kadai for deep frying. Once hot, drop in the pieces carefully into the oil and cook them on medium flame. Fry till the pieces turn golden brown in colour. Later drain them from the oil and keep aside.
• Time to prepare the sauce. For this, heat oil in a kadai. Add in finely chopped garlic and sauté till they turn golden brown. Later add in the chopped onions and fry till transparent. Next in goes capsicum and fry them for a minute. Make sure to maintain its crunchiness.
• Add in the red chilli paste and tomato ketchup and mix. Mix in sugar and salt. Now add water into this.
• Make a slurry using cornflour and water and combine this to get a saucy texture. You can add in pepper powder if you want it to be spicier.
• Finally, mix in the fried jackfruit seed pieces into the sauce and toss well for a minute. Now this goes straight into your plate to enjoy it crackling hot.
This blissful starter is now ready to gobble up on a rainy day or during winter evenings.
