Chicken Chili Recipe

Ingredients:
2 lb. chicken breast, trimmed of any excess fat
2 tbsp olive oil
2 cup chicken broth
1 can red kidney beans
½ onion, minced
1 Yellow pepper, diced
2 cups corn, frozen
1 28 oz. can chopped tomato in puree
2 tbsp. chili powder
2 tbsp. paprika
1 tbsp sugar
1 tsp Cumin
1 tsp Coriander
1 tsp Salt
½ tsp. pepper

GARNISH
Cilantro
Sliced jalapeno
Diced red onion
Shredded cheddar

Directions:
1. Assemble the grinder. Grind the chicken.
2. In a large pot add olive oil and saute the chicken.
3. Add the onions and peppers and cook for 3 minutes.
4. Add the spices and cook for 1 minutes
5. Add the rest of the ingredients and let simmer on low heat for 30 minutes.
6. Serve with the garnishes.
