BEYOND MEAT CHILI

This savory Beyond Meat Chili will warm you up on the coldest of winter days.

*Recipe*

Spice Mixture:
1 tbsp salt
1.5 tsp ground black pepper
2 tsp organic sugar
1 tbsp garlic powder
1 tbsp onion powder
1.5 tbsp chili powder (I used hatch green chili powder)
1 tbsp cumin
1 tsp oregano
1.5 tsp paprika
1/2 tsp cayenne

Chili Ingredients:
1 lb Beyond Meat ground beef
2 medium yellow onions, diced
3-4 stalks celery, topped and bottomed, then diced
2 green bell peppers, diced
8-10 cloves garlic, minced
1 15oz can organic corn, drained
1 15oz can organic pinto beans, drained
1 15oz can organic kidney beans, drained
1 15oz can fire roasted, diced tomatoes
1 small can hatch green chilies
1 lemon, juiced
3 tbsp tomato paste
Grapeseed oil
All-purpose flour
1.5 cartons vegetable broth
Green onions (optional)

Preparation:

Take Beyond Meat out of package and place in a large mixing bowl. Add 2 tbsp of the spice mixture to the Beyond Meat and mix in with your hands. Bring the remainder of the spice mixture over next to the stove top to continue using.

Heat a large sauce pot over medium-high heat. Once heated, add 2 tbsp grapeseed oil, then add the seasoned Beyond Meat in a round ball. After about 1 minute, flatten Beyond Meat out across the pan to allow for an even sear. Sear for 3-4 minutes, then break up meat with a wooden spoon. After broken, continue to sear for another 1-2 minutes, then turn down heat to medium and transfer Beyond Meat from sauce pot to a separate plate.

Return heat to medium-high, add in about 1/4 cup grapeseed oil, then add onions, celery, and green pepper. Season with 1 tbsp of the spice mixture then mix in and allow veggies to sear for 4-5 minutes. Add garlic, season with 1 tsp of the spice mixture, then mix in again and allow to sear for 1 minute. Add 1/4 cup flour and stir in until you can’t see the white of the flour. Allow to sear for another 1-2 minutes, stirring frequently with a wooden spoon. Then add tomato paste, stir in, and sear for another 1 minute. Now add in vegetable broth in 1/2 carton portions. Each time you add in 1/2 carton broth, stir with spoon to combine and wait until broth is bubbling/boil before adding another 1/2 carton. Once all broth is in the pot and combined, add corn, beans, tomatoes, hatch chilies, lemon juice, and the remainder of the spice mixture that is still left. Use a whisk to combine all ingredients. Once chili is bubbling/boiling, add the Beyond Meat back into the pot and stir in. Bring chili to a boil, then reduce to a simmer, cover with a pot lid, and allow to simmer for at least 1 hour (I’d recommend at least 2 hours)

Serve in a bowl with sliced green onions. Enjoy!
