Smoked Beef Chili Verde on the Pit Barrel Cooker (Chile Verde recipe)

I have some smoked beef chuck roast chile verde for you guys! I’ll post the ingredients below

One 2.5 -3 Lb beef chuck roast Or you can use beef short ribs or brisket

Chile verde: This is for the salsa and the ingredients in the pot
2.5 Lbs tomatillos
About 4 Jalapenos
6-8 serrano chiles
2 Large yellow Onions
4 cloves Garlic (these were blended in the salsa)
1 Bunch cilantro
2 limes
About 1 TBL oregano
Salt & Pepper

The amount of ingredients may vary depending on the size of onions and chiles. Adjust to your liking.

You can also ad a couple of bay leaves to the pot when cooking, or more garlic and cilantro, it just depends what you have on hand, and what you like.
