**** Recipe ****
Ingredients
380 grams (13.5 oz) water
16 grams (f0.5 oz) sodium citrate
300 grams (10.5 oz) sharp, aged cheddar, grated
100 grams (3.5 oz) smoked cheddar, grated
1/2 10 oz. Can Rotel tomatoes with chilies
2 tsp. Parmesan cheese, finely grated (optional)
Instructions
Wish together water and sodium citrate in a pan. Place pan over medium to medium-high heat and bring to a boil.
When the water is boiling, add about 1/3 cup cheese to the boiling water. Wish thoroughly until the cheese is completely melted. Continue to add the cheese, 1/3 cup at a time until all the cheese has been incorporated.
With a spoon, check the viscosity of the cheese dip. It should seem a little runny (it will thicken more when you serve it). If it’s too runny, add the parmesan cheese a little bit at a time until the sauce thickens up.
Add the Rotel tomatoes, and mix well. When the dip comes back to a simmer, remove from heat and serve.
