Everyone has an opinion on what makes chili proper or not, but to me, chili is meat and beans and tomatoes and spices: hearty, stewy, with so many toppings. Yes, there are BEANS here. There is also TOMATO (an ingredient I didn’t know was divisive, but have since learned it is!). Anyway, there are two versions of this chili: the long way (using hunks of beef for braising and beans cooked from dried) and the short way (using ground beef or turkey and beans from a can). See? I do care.
For the toppings, I won’t tell you what to do so consider yourself free. I recommend full-fat sour cream, jalapeños, shredded cheddar cheese, scallions AND red onion (pickled and raw), and some sort of corn chips on the side like Fritos or tortilla chips. If you’re a bit of a minimalist and just go for sour cream and scallion, you might want to make a little cornbread. To further upset the masses (brace yourself): My cornbread recipe uses mayonnaise and has a touch of sugar. 1/2 The reason cornbread WAS sweet in the South was that they grew and ground sweet varieties of corn to use as cornmeal. Most se..commercial cornmeal is made from corn used to maximize the starch, not the sugar. 😮That being said, most Southerners would decry the use of sugar in cornbread because

I never liked chili. Mainly, I experienced tasting ground beef ones and I don't like the texture. And then later in life, I stopped eating 4-legged animal meat.
I do like the way you prepped it though, perhaps, I can try chicken meat in place of it. I'll have to give the cornbread a try.

your fear of comments is not going to stop me from asking what the heck you are doing! you didn't use pinto beans for God's sake, you are originally from California!………. and you didn't soak them overnight…… that's pretty controversial….soaking the beans for between 6-12 hours helps to eliminate indigestion, gas, bloatiness and of course pesticides.

Honestly grateful for having grown up with "mid" cooks where the culture was basic decent food. Nothing fancy or precious. It's freeing to not be rigidly latched / shamed to one way of cornbread, chili, preparation, etc.
