Chili Recipe I make every once in a while. This is quite a few servings so have a hungry family or you can freeze some or can it for later. I won a chili competition with this recipe once. Speaking of which many chili cookoffs require it with no beans. I originally made it because I was on a high protein diet. Great for weightlifters.
Salt / pepper
Olive Oil
1 Chicken stock
1 Big Onion
2 peppers any color
2 cups celery
2-4 pounds of meat
2 Tbsp chili powder
4 cloves garlic
1 Large Can Diced Tomatoes
2 tbsp tomato paste
4 tbsp Chipotle pepper paste

i am kind of indifferent to beans. they can easily be added but i like my chili super meaty

Very nice recipe–I'd lose those meat drippings for pure oilive oil..and I like mine placed over rice.

is it bad i could call that more of a stew to me and most people Chili con carne has to be spicy. but i do like you used two Holy trinity in your cooking. refogado and Cajun Holy trinity.
Add a lil cornstarch for thickness and a pinch of cumin and i think we got something. also, just me, but i'd substitute the chicken for some sausage.
I agree with you but outside of certain pockets of America chili without beans is really rare.
Knowing youtube if I had not put in "no bean chili" I would have gotten 100 responses saying something along the lines of "U R SUCH A *@!%& y every1 noes CH1li has bEans sT00pid n3wb!!!!!!".
When I made it I had kind of a bodybuilders recipe in mind. So I left out the sausage but an excellent idea.
Cumin is a good call as well.
If I added a roux or some other way of thickening it I imagine it would be closer to a traditional chili con carne.
