Laal Maas Recipe | Rajasthani Laal Maas | Authentic Laal Maas Recipe | Laal Maans | Mutton Recipe | Mathania Chilies Laal maas | Spicy Mutton Curry

Ever since I visited Mathania some years ago, my relationship with chilies grew even stronger. I tasted this Laal Maans curry at Jodhpur and the simple recipe completely won my heart over. Try this recipe this weekend and let me know how you like it.

LAAL MAANS RECIPE
Preparation time: 45 minutes
Cooking time: 45-60 minutes
Serves: 02

Ingredients
For Marination
1 kg mutton, curry cuts, मटन
2 tbsp ginger garlic paste (70% garlic + 30% ginger), अदरक लहसुन का पेस्ट

For Gravy
¼ cups ghee, घी
2-3 cloves, लौंग
10 black peppercorns, काली मिर्च
2 small cardamom, छोटी इलायची
1 big cardamom, बड़ी इलायची
250 gms onion, sliced, प्याज
marinated mutton
Salt to taste, नमक स्वादअनुसार
20 mathania chilli paste (use soaked chillies), मथानिया मिर्च पेस्ट
200 gms curd, beaten, दही

Process
● In a mixing bowl, add mutton, ginger garlic paste and marinate well as keep it aside for 1 hour.
● In a large saucepan, heat ghee and splutter peppercorns, green cardamom, black cardamom and saute well.
● Add onion and saute till translucent, add the marinated mutton and saute for 4-5 minutes.
● Add salt to taste, mathania chilli paste and saute well for 4-5 minutes to remove chillie’s rawness. Cover and let it cook for 30 minutes.
● Add curd and cook for until mutton becomes tender.
● Serve with roti.
