My Name is Jackie Patereck, I am 17 years old and I am a Whole food plant based with no oil and minimal processed foods. I began my journey with the help of my parents 4 years ago. I was having so many seizures and no Doctor could figure out what was going on. With the help of my mom and taking me to a nutritionist finding out that I am allergic to casein, a protein in dairy, along with many other foods I was allergic too. We were on the Standard American Diet! And boy did it make my body feel Sad! With the elimination of Soy, Dairy, Wheat (Gluten) and other foods my health slowly but surely improved. My brain began functioning properly and little by little the Seizures have been less and less.

I have energy and love to cook for myself, this way! We love to watch your show and am thrilled to be participating in your show and help other people who may be having similar experiences as mine. I want to create my own Vegan Business and grow what I love to do! Possibly helping other people help themselves also!

Spicy Cannellini bean and Mushroom Chili with Quinoa

Recipe:

3 Cups of Cannellini beans
1 Large Container of Baby Bella Mushrooms Cut into 4
1 Jar of Tomato sauce , bello brand preferred
1 jar of Tomato Paste
1 bunch of Green Onions chopped
2 Red Bell Peppers chopped
2 Cloves of Garlic diced
1 Cup of Cooked Quinoa
3 Tablespoons of Cayenne Pepper

Saffron Rice
2 Cups of Basmati Rice
3 1/2 Cups of Water
1/8 Cup of saffron Water
Saffron crushed in hot water
Rice Cooked in Water for 20-25 mins
