Biryani is the single most-ordered dish on Indian food Menu. Paneer biryani is the favorite among all Vegetarians. In this recipe Paneer or Indian cottage cheese is seasoned panfried and simmered in a tomato based gravy and then layered in pan along with cooked rice and steamed (Dum).

Marinate and fry
Paneer – 400 gm
Turmeric powder – 1 tsp
Chili powder – 1 tsp
Salt
Oil
For Gravy
Oil – 3 tbp
Cumin – 1/2 tsp
Bay leaf – 2
Green cardamom – 10
Black cardamom – 2
Cinnamon stick – 2 inch
Onion – 1 big
Turmeric – 1/2 tsp
Chili powder – 1 tsp
Coriander powder – 1 & 1/2 tsp
Curd – 1/2 cup
Tomato Puree – 1/2 cup
salt
green chili – 2
Kasoori Methi – 1/4 tsp
Water – 1 cup
Rose water – 1 tsp
Garam masala – 1 tsp
Coriander leaves
To cook Rice :
Water – 5 cups
Rice – 2 cups
Salt
Green cardamom – 8
Bay Leaf – 1
Green chili – 2
For Dum:
Ghee – 4 tbsp
