Kielbasa Chili
2 Tbsp Olive Oil
1 lb Ground Beef
2 lbs Kielbasa – sliced and halved
1 Medium Onion – diced
1 Bell Pepper – diced
3 – 4 Cloves of Garlic – minced
1 15 oz Can Kidney Beans – drained & rinsed
1 15 oz Can Black Beans – drained & rinsed
1 14 oz Can Petite Diced Tomatoes
1 C Frozen Corn
2 15 oz Cans Tomato Sauce
1/2 C Water to rinse cans
2 Tbsp Chili Powder
2 tsp Oregano
1 tsp Cumin
1/4 tsp Cayenne Pepper
Salt & Pepper to taste
*Garnish with sour cream & shredded cheddar
Drizzle oil in a large pot add onion and cook for 2 – 3 minutes, add garlic cooking until
fragrant. Add ground beef and brown while breaking up meat. Add bell pepper cooking for 2 – 3 minutes. Add in chili powder, oregano, cumin, cayenne. salt & pepper. Stir in kielbasa. Stir in diced tomatoes, corn, kidney & black beans. Stir in tomato sauce. Rinse cans with 1/2 cup of water.
Cover and simmer for 45 minutes.
