Hi there! I have another AMAZING crockpot recipe for you guys. This one is a take on a classic, but without ground beef/turkey. But before you write it off completely!! -this dish is still really hearty and meaty flavored, from all of the garlic and the beef broth we use and possibly all the cheese?? But if you absolutely have to have ground meat in your chili mac, it is super easy to modify this recipe to add it in. So, whether you want ground meat in it or not, give this recipe a try! It is the best meatless chili mac that I’ve ever made, and as for the garlic content… The recipe calls for 10 cloves… I only used five…. Five cloves was not at all overwhelming! I thought 10 might be, but after making it with five, 10 cloves might just be ok. So, if you make this, and you use the 10 cloves, let me know how garlicky it really is!!

What You’ll Need
– 10 cloves of garlic, minced (I just smashed mine)
– 1 medium onion, diced (I used a vidalia)
– 2 tablespoons olive oil
– 1-15 oz can kidney beans, drained
– 1-15 oz can chili beans, not drained
– 1-15 oz can sliced stewed tomatoes, not drained
– 1-15 oz can diced fire roasted tomatoes
– 4 tablespoons tomato paste
– 4 cups beef broth (vegetable is ok, too)
– 2 tsp chili powder
– 1/2 tsp paprika
– 2 tablespoons cumin
– 1/2 tsp salt
– 1/2 tsp pepper
– 1/4 tsp cayenne (optional)
– 1 lb elbow macaroni noodles, uncooked
– 3 1/2 cups shredded cheddar cheese (I used an 8oz block)
– fresh chopped parsley, for serving
What You’ll Do
1. Make sure you have a LARGE crockpot
2. Chop the onion and garlic; saute in 2 tablespoons of olive oil (and 1 pound ground beef/turkey, if desired), until it’s all cooked through and golden brown
3. Add the tomatoes, beans, tomato paste, broth, spices, and sautéed onions, garlic, and optional meat, to the crockpot. Stir well
4. Cook on high for 2 – 2.5 hours
5. Either 1) add the 1 pound of pasta to your crockpot, stir, and allow to cook for 15-40 minutes, until the pasta is tender; or 2) cook the 1 pound of pasta separately, for the chili to be served over (If you have meat in your chili mac, you may not have enough room in your crockpot to add the pasta, so the second option of cooking the pasta separately might be best for you)
6. Grate 3.5 cups of cheddar cheese and stir into your chili mac
7. Once the cheese has melted, serve up a nice hearty bowl of chili mac
8. Garnish with extra cheese, chopped parsley, chopped green onion, and/or sour cream
9. Enjoy!
