I’m officially challenging Uncle Roger. Thai green curry is quite complex, though as long as you stick to the traditional ingredients and ensure you achieve a smooth, properly grounded paste, things can go much smoother. Ingredients are listed as follows:
1 tsp Coriander seeds
1 tsp Cumin seeds
1 tbsp White Peppercorns
2 stalks Lemongrass
3oz Kaffir Lime Zest
3oz Galangal
7 cloves garlic
10 Thai Green Chilis
1/2 cup Cilantro Stems
1 cup fresh Thai Basil
1/2 cup Kaffir Lime Leaves
5 Shallots chopped
1 tbsp Shrimp Paste
Then, into a pan:
1 tbsp neutral oil
2 tbsp Curry Paste
3 tbsp Basil Oil
Splash of Coconut milk (13 oz)
Diced Chicken
Coconut Cream
Thai Eggplant
3 tbsp Fish Sauce
3 tbsp Palm Sugar
5 Kaffir Lime Leaves
2 oz Red Bell Pepper
1 cup Thai Basil
White Thai Rice
