My Perfect Chili Recipe with Delicious Cornbread Muffins!

It’s officially comfort food season! This is my perfect chili recipe, which consists of chuck steak, dried pinto beans, and ancho, mulato, and pasilla chilis! In this episode, I show you how to make a chili paste that adds depth and flavour, a thick and full-bodied sauce, and delicious cornbread muffins!!

The cornbread muffins are so good, you could eat them by themselves!

This chili recipe is next level. It requires a lot of ingredients, but it doesn’t take a lot of effort to bring this all together. The oven does most of the work for you! Better still, you can make a large batch of this chili and store it in the freezer for up to 4 months! Just let the chili defrost, then gently reheat, for those nights when you want something quick, warming and flavoursome!

INGREDIENTS

Beans:
250g dried pinto beans
150g reserved bean juice

Chili Paste:
60g dried chilis (approx. 5 whole chilis – I used 2 ancho, 2 mulato and 1 pasilla)
500g water

Beef:
800g braising beef (short rib or chuck)

Chili:
1 red onion, chopped
5 gloves of garlic, chopped
4 tbsp olive oil
5g chili powder
20g sweet smoked paprika
15g cumin
15g cocoa
680g passata
800g chopped tomatoes
200ml beef stock

Seasoning:
50g brown sugar
splash of hot sauce (optional, not shown)
50g apple cider vinegar
20g Worchestershire sauce
pinch of salt

156g flour
106g yellow cornmeal
132g sugar
1 tsp salt
15g baking powder
75g melted butter
1 egg
236ml milk
