Vigan longganisa, also known as the Ilocano longganisa, is a Filipino pork sausage originating from Vigan City, Ilocos Sur. It is a type of de recado longganisa. It is made with ground lean pork, ground pork fat, brown sugar, garlic, onions, bay leaves, soy sauce, vinegar, black pepper, and salt to taste in hog casings. Chili flakes may also be added. The sausages are celebrated in an annual “Longganisa Festival” in Vigan City.

VIGAN LONGGANISA
“Lomola” Version
INGREDIENTS:
I – LONGGANISA MIX
1/4 cup – sprite
1/4 cup – white vinegar
2 tbsp – cornstarch
1 tsp – chicken powder
1 tbsp – white pepper powder
1 tablespoonful – spicy chili powder
1 tbsp – brown sugar
1 tsp – coarse salt
*** mix well/ set aside
II – COMBINE INGREDIENTS
540 grams – ground PORK BELLY
1 head – ground garlic
***1) add longganisa mix
***2) mix well/ cover tightly/ leave 12 hrs in room temperature
***3) after 12 hrs: mix well/ cover/ cure in the refrigerator for 7 days
III – LONGGANISA WRAPPING/ STORAGE
***refer to video
IV – COOKING
***1) cut both plastic ends/ unwrap
***2) put in the pan
***3) add 3 tbsp water (5 pcs longganisa)
***4) flip as necessary/ use low fire
Preparation: 8 days
Cooking time approx.10 minutes
Serving 1+ people
