Stuffed Chilli Bajji Recipe:
Stuffing:
Onion (finely chopped) – 1 Cup
Red Chilli Powder – 1 tsp
Coriander Powder – 1 tsp
Salt – ½ tsp
Tamarind Paste – 2 tbsp
Batter:
Besan – 1 Cup
Rice Flour – ¼ Cup
Red Chilli Powder – 1 tsp
Salt – 1 tsp
Asafoetida – As Needed
Baking Soda/Cooking Soda – A Pinch
Water – ¾ Cup
Other Ingredients:
Bajji Chilli/Banana Chilli – 8 nos
Cardia Advanced Groundnut Oil – As Needed
Garnish:
Onion (finely chopped)
Chaat Masala
Coriander Leaves (finely chopped)
Cooking Instructions:
1. In a bowl, combine all the ingredients for the stuffing in a bowl.
2. Make slits on the chillies and gently remove the seeds, making sure not to damage the chillies.
3. Stuff some of the stuffing into the chilli cavity.
4. To make the batter, mix together all the ingredients except water. Add the water gradually while whisking to make sure there are no lumps.
5. Dip the stuffed chillies into the batter and fry in hot Cardia Advanced Groundnut Oil until crisp and golden.
6. Slice the chillies. Garnish with chopped onion, coriander leaves and chaat masala.
Cooking Tips:
1. Optionally, you can re-fry the Bajji pieces after slicing them, to get crisp edges.
