Serving size: About 25-30 tamales depending on the size of your husks. Feel free to double or triple this recipe!

-30 Corn husks
Filling:
For the boiled chicken:
-2 chicken breasts
-Enough water to cover the chicken in a pot
-1/2 an onion
-7 garlic cloves
-2 tsp black peppercorns
-5 whole cloves
-2 bay leaves
-Salt
For the Sauce:
-10 garlic cloves
-6 Serrano peppers
-1 jalapeño
-1.5 lb tomatillos
-Enough Water to cover & boil
-Salt
After cooked, Blend peppers & garlic in a blender with
-Salt to taste
-1 tsp cumin
DOUGH (Masa):
-1 cup + 2 tbsp ghee
-1 tsp salt
-1 tsp baking powder
-2 cups maseca (masa harina)
-1.5- 2 cups warm chicken broth (start by slowly adding in 1.5 cups. After mixing for 10 minutes, if the dough still doesn’t float or match the consistency shown, drizzle in the other 1/2 cup. It is not always needed.)
