Ingredients: Eggs Tomatoes (3-5) Red bell peppers (2) Garlic (2 cloves) Tomato paste Spices to taste Fresh herbs: dill, parsley, green onions Instructions: Heat a skillet with a bit of oil over medium heat. Add finely grated garlic and cook briefly until fragrant. Add the diced bell peppers and sauté for about 5 minutes. Add chopped tomatoes and a spoonful of tomato paste. Cover the skillet and let the mixture simmer until most of the liquid evaporates. Season with salt and pepper to taste. Make small wells in the vegetable mixture and crack an egg into each well. Sprinkle a little salt over the egg whites, leaving the yolks intact. Cook until the egg whites are fully set, then remove from heat.
