Ramadan Food Prep |6 Samosa Fillings| Aloo Kaju,Qeema,chicken noodle,Date&Nut,Spring roll, Kiri

1. Smokey Qeema Samosa Filling Recipe
Ingredients for 35-40 samosas
• Minced meat (Mutton or Beef) 1/2 kg
• Oil 2 tbsp
• Onions 2 medium sized, chopped
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Salt to taste
• Red chili powder 1 tsp
• Turmeric powder 1tsp
• Garam masala 1 tsp
• Coriander powder 1 tsp
• Water as needed
• Green chili 1-2, chopped
• Fresh Coriander 2 tbsp chopped
• Lemon juice1 tsp
• Coal (koila/charcoal) 1 piece
• Samosa sheets (samosa patti) 35-40 (I used Sumbullah brand)

2. Honey Cheese and Nuts Pockets Recipe
Ingredients: for 14-16 pockets
For Cottage Cheese
• Milk 1 litre
• Tatri (lemon salt) ½ tsp or less (or use lemon juice 3-4 tbsp)
• Muslin cloth
For the Filling:
• Cottage Cheese 1 cup
• Dates 1 cup
• Walnuts 1/2 cup
• Honey 3-4 tbsp
• Cardamom powder 2-3 pinch
• Spring Roll Sheets (Roll patti) 14-16

3. Aloo Kaju Samosa Filling Recipe
Ingredients for 25-30 Samosas
• Coriander-cumin powder mix (Dry roast 1 tbsp coriander seeds and 1 tsp cumin seeds and grind into powder)
• Oil 2 tbsp
• Cumin seeds 1/2 tsp
• Green peas 1/2 cup (I used frozen, if you are using fresh then boil them until half cooked)
• Cashew Nuts 15, roughly broken
• Boiled Potatoes 1/2 kg, boiled and mashed
• Red chili flakes 1/2 tsp
• Salt 1 tsp (or to taste)
• Lemon juice 1 tsp
• Fresh coriander leaves 2 tbsp
• Fresh green chilies chopped 1-2
• Samosa patti (sheet) 25-30

4. Chicken Noodle Pockets Recipe
Ingredients for 10-12 pockets
• Chicken 200 grams, boiled and shredded
• Maggi noodles 1 packet (80 grams)
• Ginger paste 1 tsp
• Garlic paste 1 tsp
• Chopped Onions 2 tbsp
• Cabbage 1 cup shredded
• Carrot 1/2 cup, julienne cut
• Green capsicum 1/4 cup
• Yellow capsicum 1/4 cup (optional)
• Soy sauce 2 tbsp
• Chili sauce 2 tbsp or more
• Salt to taste
• Black pepper to taste
• Spring onions 2-3 tbsp
• Spring roll sheets 10-12

5. Spring Rolls Filling Recipe
Ingredients for 20-25 spring rolls
• Onions 2 tbsp, chopped
• Oil 2 tbsp
• Ginger paste 1/2 tsp
• Garlic paste 1/2 tsp
• Chicken 250 grams, coiled and shredded
• Carrot 1/2 cup, julienne cut
• Cabbage 1 cup, shredded
• Red capsicum 1/4 cup, julienne cut (optional)
• Yellow capsicum 1/4 cup, julienne cut (optional)
• Green capsicum 1/2 cup, julienne cut (use 1 cup if you don’t have yellow and red capsicum)
• Boiled corn 1/2 to 1 cup
• Vinegar 1 tbsp
• Red chili Sauce 2 tbsp or more to taste
• Soy sauce 2 tbsp
• Salt to taste
• Black pepper powder to taste
• Spring onions 4-5 tbsp
• Spring roll sheets (Roll patti) 20-25

6. For 6th filling you only need kiri cream cheese squares and samosa patti
