Smoked Pot Roast Recipe – Quarantine Cuisine

Ingredients

1lb Chuck Roast
1tsp Garlic Powder
1tsp Onion Powder
1tsp Kosher Salt
1tsp Black Pepper
1tsp Ancho Chili Powder
1tbsp Rosemary (fresh or dried)
1tbsp Thyme (fresh or dried)
2c Yukon Gold Potatoes, Quartered
2c Carrots, Large Dice
2c Onion, Quartered
8oz Sliced Mushrooms
1c Red Wine (good wine)
2c Chicken Stock

Directions

1. Combine the garlic powder, onion powder, salt and pepper. Rub roast with mixture.
2. Preheat the smoker, set temperature to 180℉, lid closed for 15 minutes.
3. Smoke the chuck roast for 1-1/2 hours. Remove roast from grill and increase temperature to 275℉.
4. Transfer the smoked chuck roast, potatoes, carrots, onions, ancho chili powder, red wine, rosemary, thyme, mushrooms, and chicken stock to a large tin or preferably, a Dutch oven.
5. Cover the tin with foil, or put the lid of the Dutch oven and place into the Traeger. At 275℉, braise the roast for 4-5 hours or until meat is very tender.
Serve with your favorite roasted vegetables or mashed potatoes and gravy.
