Easy Mexican Style Pork in Red Chili Sauce IN 25 MINUTES

Puerco en Chile Colorado, This easy Mexican recipe should only take 25 minutes to have you reminiscing. I chopped pork butt and potatoes into small pieces for faster cook time. I cut time, not flavor amigos. If you choose to add nopales I want to share that I used jarred nopales and they turned out delicious. Ingredients
Oil
1/2 Pound pork but (or your choice of pork)
2 Potatoes
1 cup Nopales (Jarred el Mexicano or fresh)
1/2 chopped onion
3 garlic cloves
3 California chiles
1 pasilla chile
1 Tbs chicken bouillon (Knorr Natural no Msg)
1/2 Tbs Mexican oregano
1 1/2 tsp ground cumin
Salt and pepper to taste

Tip- I blended the chiles with 2 1/2 cups of the chili water
I enjoy this recipe with white rice and pinto beans

How to make Nopales / Cactus

1 dozen tortillas made by hand
