Ingredients:
* Chinese cabbage: 1
* Chinese radish: 1
* ginger: 1
* garlic: I used 5
* Chili: 5
* carrots: 2 big
* spring onions: 5
* fish oil or oyster sauce: 1 dL
* salt
* chili powder: 1dL
1. divide Chinese cabbage into 4 quarters, and there must be salt between each leaf layer on all 4. put them in a bowl with a little water so that they are just covered
2. rinse the Chinese cabbage so that the salt comes off, about 2 times for each.
3. peel the ginger, peel the garlic, cut the top of the chili, and blend these three together with chili powder and the fish oil. blend well. this is paste.
4. cut off the top of the Chinese cabbage, and peel them and cut them into small sticks, 2mm wide.
5. spring onions are cut diagonally into pieces of 1 cm width, and
the carrots are also cut into crooked pieces here 1mm width. this is mixed into a paste.
6. the Chinese cabbage must be squeezed so that almost all the water disappears. but don’t squeeze too hard.
7. put the paste between the layers of Chinese cabbage, and put it in a sealable jar. Let ferment for 2-4 days!

I like this recipe a lot, it is very similar to the one I use. I ferment mine for some time after applying the kimchi paste.
