Alu dum dahi bada is one of the most loved street foods of Odisha and an essential part of the childhood of every Odia who grew up in Odisha. The magic created by the spicy potatoes and deep fried badas soaking in flavored buttermilk is unparalleled and will leave your taste buds asking for more. It is bound to be a hit with family and friends.

ALU DUM
Ingredients:
Small potatoes
Onion
Ginger
Garlic
Green chilies
Tomatoes
Turmeric
Coriander Powder
Cumin Powder
Garam Masala
Salt
Sugar
Mustard Oil

Process:
Parboil potatoes, peel and poke holes in them with a fork. Smear potatoes with salt, turmeric and fry in oil till they become crispy on the outside. Make a paste out of ginger, garlic and green chilies. Grind the onion and tomatoes separately as well. Heat mustard oil in a pan till it smokes. Add a teaspoon of sugar and let it caramelize. Throw in a couple of bay leaves and whole red chilies. Make a slurry of turmeric powder and chili powder with water and add to the oil. Add onion paste and fry for 4-5 minutes, followed by the ginger, garlic and green chili paste. After a minute or two add tomato paste, along with coriander powder, cumin powder and garam masala. Let the masala cook for another 3-4 minutes or till it releases oil. Drop in fried potatoes and add 1-2 tablespoons of water. Make the gravy nice and thick (not watery).

DAHI BADA
Ingredients:
Urad dal -1 cup
Moong dal – ½ cup
Rice powder
Crushed black pepper
Salt
Cumin seeds
Chopped green chili
Chopped curry leaves
Yoghurt- ½ cup
Black salt

Process:
Soak the dals together for 4-6 hours. Grind the dal into a paste using very little water. Beat the batter properly. Add in salt, crushed pepper, cumin seeds, chopped green chilies and curry leaves. Heat oil for deep frying the badas. Wet hands before dropping in badas into oil as little balls. Fry them till golden brown. Soak them in a warm water.
In another bowl, dilute ½ cup of yoghurt in 2 cups of water. Add salt, black salt, chili powder. Gently squeeze out the badas into the yoghurt mixture. Temper dahi bada with mustard seeds, curry leaves, whole red chilies, chopped ginger spluttered in oil.
