Never found decent tacos de tripas when I lived in Denver. The did have them, but the tripas were basically minced, they got really crispy, it was still very tasty, but I missed this style of tripas when living there.

Slept on them my whole life. And about a year ago finally tried it and literally that’s the only tacos I get now days lol unless I I go to a place with real Al pastor tacos, those will always be my favorite forsure.
