1 lbs beef 1 inch dice
1 lbs pork shoulder 1 inch dice
1 lbs ground beef
2 TBL fresh garlic minced
1 tsp dried oregano
1/4 celery salt
2 TBL cumin
Chili powder to taste
1 tsp onion powder
1 TBL Hot, smoked paprika
3 TBL avocado oil
1/2 medium red onion diced
1 poblano diced
1 beer
2 cans diced tomatoes
1 can tomato sauce
Salt / pepper to taste

Step 1
Mix the garlic powder, oregano, celery salt, cumin, chili powder, onion powder and paprika together in a medium bowl. Salt and pepper to taste.

Step 2
Season the beef, pork and ground meat with the seasoning.

Step 3
In a large pot over medium heat, add 2 TBL avocado oil and the beef a little at a time. This process will be done in batches not to to crowd the pot. Cook until browned. Remove. Add the the pork. Repeat until the pork is done. Remove. Add the ground beef. Cook until browned. Remove.

Step 4
Add the oil. Add the onions and poblanos to the pot. Cook until softened. Add the garlic and cook for about minute. Add the tomato sauce. Reduce to about half. Add some of the seasoning and 2 cans of tomatoes. Return the meats to the pot. Test for seasoning. Add as needed. Simmer for two hours or until to beef gets very tender. Serve with cheese and sour cream, tomatoes or favorite garnishes.
